I have replaced store bought collard greens with dandalion greens. I'll be looking into berries and walnuts next. I'll let you know what I find. February 6, 2010 marks the 65th earth-day of the Honourable Robert Nesta Marley OM (Bob Marley). He remains the most widely known and revered performer of reggae music, and is credited for helping spread both Jamaican music and the Rastafari movement to a worldwide audience

Jamaican-born reggae musician Bob Marley, along with other musicians in his genre, also helped to spread Rasta around the world. The term “Rasta” is a shortened term for the Rastafarian movement that emerged in Jamaica in the 1930's and originally started among black members of the poor and peasant classes. Rasta is both a philosophy of life and a religion. Central to the religion is Haile Selassie I who was the last emperor of Ethiopia. In Rasta, Selassie is accepted as Jah, which is the Rasta name for God.

The term “Rastafari” comes from the combination of a term of honor and a name. Ras means “Chief” and Tafari was the first name of Haile Selassie I prior to his coronation. Some individuals see Rastafarianism as a political movement, a sentiment that is offensive to religious Rasta people. The Rasta ideal is centered in simplicity and a natural way of living; self-reliance in favor of materialism; peace, not war, and respect for all living beings.

The true Rastafarian lifestyle includes keeping a vegan or vegetarian diet. The dietary laws are drawn from the Old Testament books of Leviticus and Deuteronomy. "Ital" is a term used by Rastas, derived from "vital", which means a natural and healthy way of life. Ital refers to diet, but also may infer a wider ideal of purity, all again stemming from that which is put into the body, or Jah's temple. Pure, organic and unrefined foods are central to the Ital diet, and are said to be closest to the essential Life Force, especially as no killing or blood is involved in Ital "livity" (Rasta living).

As ordained in Genesis 1:29, the Ital diet is a natural path reaping only that which grows naturally upon the Earth.

"And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat." (Genesis 1:29)

Let's share the vision of One Love for all, including ALL the animals we share our world with, in celebration of Bob Marley's message of peace, unity and respect.
"Our duty is to extend the hand of charity to any brother and sister in distress, to every human, animals and plants." - Rastafari philosophy

"Let's get together and be all right."
On Bob Marley Day why not invite some friends over for a delicious Jamaican "Ital" Stew?

Ingredients:
2 cups dried beans (any kind, presoaked overnight)
2 medium potatoes
2 medium sweet potatoes
12 medium okra
2 cups sweetcorn
3 medium carrots
3 stalks of scallions (spring onions), chopped
3 cloves fresh garlic, minced
1 small green Scotch bonnet (habanero) pepper, minced
3 cups natural coconut milk
1 tablespoon soya margarine
7-12 pimento seeds (allspice)
3 pieces fresh thyme, roughly chopped
2 pints of vegetable stock
2 cups whole wheat flour
Fresh cilantro (coriander) for garnish

Directions:
Chop the vegetables into chunks or dice them (your preference).
Put the beans in a large pot, pour in the stock and bring to the boil with the scallions, pimento seeds, thyme, garlic, and Scotch bonnet pepper.
Add the coconut milk and simmer until the beans are fully cooked, then add the vegetables to the pot and cook until just tender.
The stew should be more thickened by now. Add the soya margarine and simmer until melted.

To make the spinners:
Combine the flour in a bowl with enough water to make a stiff, smooth dough. On a floured work surface, roll out the dough so it’s a ¼-inch (6-mm) thick and cut into 12 pieces. Roll the pieces into cylinders, drop them into the simmering stew and cook for approximately 5 minutes.
Garnish the stew with cilantro and serve with brown rice and a salad.

Thought you knew everything there is to know about the vegetarian diet? These few facts may surprise you:

1. Vegetarianism has traditionally been linked to the people of ancient India.
Even today, Indians make up more than 70 percent of the world's vegetarian population.

2. The first Vegetarian Society was formed in 1847 in England.
The main aim of the members was to dispel the common belief
that it's not possible to lead a healthy life without eating meat.

3. There are varying degrees of vegetarianism. The strictest of
vegetarians not only steer clear of all forms of meat, they also
avoid all animal products, including honey (bees are often killed
in the production of honey), and foods which might contain traces
of animal products, such as bread baked in buttered tins and sugar
to which bone charcoal has been added (to make it white).

4. You might recall the scene in Notting Hill where William Thacker
(Hugh Grant) goes on a blind date with a slightly off-the-wall "fruitarian".
Fruitarianism is a very real form of vegetarianism, where the diet consists
of fruit, nuts, seeds and other plant material that can be gathered without
killing the plant (e.g. pears can be picked without killing the plant, carrots cannot).

5. Many vegetarians follow a meat-free diet in an attempt to lower the
pressure meat production places on the environment. According to
Wikipedia.org, growing crops for farm animals requires nearly half of
the United States' water supply and 80% of its agricultural land.

6. Other people go the vegetarian route for religious reasons. Some
of the denominations that actively advocate vegetarianism include
the Hare Krishna and Rastafarian movements.

7. British research shows that a child's IQ predicts his likelihood of
becoming a vegetarian as a young adult. You guessed it: the smarter
the child, the more likely he'll eventually shun meat.

8. While veggie eating holds many health benefits, it also has other
interesting effects on the body: research shows that avoiding red
meat improves the sex appeal of male body odor.

9. The list of famous vegetarians includes Sir Paul McCartney,
Ozzy Osborne, Sinead O'Connor, Brad Pitt, Albert Einstein,
Henry Ford and Leonardo da Vinci, Lenny Kravitz, Alicia Silverstone,
Russell Simmons, Pamela Anderson, Billy Idol, Moby, Prince,
Joaquin Phoenix, Vanessa Williams, Paula Abdul,
Ziggy Marley, Natalie Portman, and Kevin Eubanks.
The list goes on...

10. Variations on a vegetarian theme

Different types of vegetarian diets are characterized by the
degree to which they exclude animal foods. Below are some
diets most commonly thought of as vegetarian yet some people
today call themselves vegetarian if they eat meat just occasionally.
Pesco-vegetarian -include fish, dairy products and eggs.
Lacto-ovo vegetarian -includes eggs and dairy products.
Ovo-vegetarian -includes eggs.
Vegan -excludes animal-derived foods of all types.
I have found that many packaged and prepared food products in health food stores can be made at home for much less cost and not too much effort. For instance you can make your own hummus, soymilk, and seitan, for a tiny fraction of what people pay for the packaged food, and it's all pretty easy. Most of these recipes are just in my head I've done them so many times. I'll post some here and invite others who have similar easy recipes that save money and packaging to do the same!
